A yummy twist on your favorite burger recipe- plus, loaded with veggies!
Serves: 4, Prep Time: 10 minutes, Total Time: 25 minutes.
Ingredients
Backyard Burger Bowl
1 lb. clean lean ground beef or turkey
4 tsp. garlic powder
½ tsp. salt
1 tsp. coconut or avocado oil
6 cups dark (leafy greens)
1 ½ cups cherry tomatoes (sliced)
½ cup pickles
1 cup red onion (roasted in oven)
8 slices bacon (cooked and crumbled)
1 tsp. salt
½ jalapeno (optional)
Special Sauce
½ cup no sugar added mayonnaise
2 tbsp. ketchup
1 tsp. coconut amino
1 tbsp. dill pickle relish
2 tsp. dried minced onion
1 pinch red pepper flakes
1 pinch salt
Directions
In a medium bowl, mix together meat, garlic powder, and salt. Heat oil in a large skillet over medium heat, then add mixture to brown, crumbling along the way. You can cook over an outside grill in a cast iron for a backyard burger flavor if you want.
Prepare lettuce, grapes, pickles, onion and bacon. Set aside. Make quick guacamole mixing avocado, lemon juice and ½ teaspoon salt (you can add in a jalapeno if you want). Roast onion in the oven at 375°F for 10-15 minutes.
Make the special sauce. Whisk everything together.
Assemble: start with greens in a bowl and layer meat mixture, tomatoes, pickles, red onion, bacon, and quick quick guacamole. Drizzle with sauce and serve. If you don't like the special sauce, use mustard for a sauce.
