One of my clients created this delicious recipe. Why not try rice for breakfast? It is an amazing way to start your blood sugar off on the right track!
Serves: 4, Prep Time: 10 minutes, Total Time: 25 minutes.
Ingredients
½ cup cooked brown rice
1 cup chicken broth
Bacon (could be pork or chicken)
¼ cup black beans
½ cup alfalfa sprouts
¼ cup chia seeds
1 tbsp. olive oil
Salt to taste
Pepper to taste
1 tbsp. apple cider vinegar
1 tsp. garlic powder
Directions
Cook the rice in the chicken broth - use homemade bone broth if you can and if not use organic without additives.
Cook the black beans ahead of time and have them in the refrigerator or use canned organic black beans if you need to.
Cook bacon.
Top with tomato, black beans, avocado, olive oil, salt, pepper, apple cider vinegar, ground chia seeds, and garlic powder. Enjoy!
