A delicious vegetarian dish full of nutrients
Serves: 6, Prep Time: 20, Total Time: 6 minutes.
Ingredients
2 cups of butternut squash
1 onion
2 cloves of garlic
½ cup red lentils
1 can diced tomatoes
1 can coconut milk
2 cups of cauliflower
3 tbsp. of curry paste
1 tsp. turmeric
1 tsp. salt
Directions
Put all ingredients in a gallon freezer bag. Freeze.
Put the freezer bag directly in the instant pot with 1 cut of chicken broth.
Cook on high pressure for 6 minutes and quick release.
Chef's Tip: Use less or milder curry spice for less spicy.
