A great option for breakfast or a snack!
Serves: 2, Prep Time: 7 minutes, Total Time: 3 hours.
Ingredients
Chia Seed Pudding
6 tbsps. chia seeds
2 cups unsweetened coconut, almond, or cashew milk
½ tsp. vanilla extract
½ tsp. cinnamon
1 tbsp. maple syrup, honey, or sweetener (optional)
Suggested Toppings
½ cup assorted berries (whole or blended)
1 banana cooked with cinnamon and coconut butter
½ cup chopped nuts or seeds
Brandy's Favorite Chocolate Chia Seed Pudding
4 tbsp. raw cacao powder or cocoa powder
Pinch sea salt
Directions
Combine chia seeds, milk, vanilla, cinnamon, and sweetener (if you choose) in a glass container or jar.
Cover and let sit overnight (or at least 3 hours) until chia seeds have absorbed the liquid and 'set up'. The pudding should be thick and not liquidy, similar to oatmeal. If it is not thick, simply add more chia seeds and let sit for 1 more hour.
Top with fruit, seeds, or cacao for a chocolate treat. Enjoy!
