Delicious and easy!
Serves: 8, Prep Time: 10 minutes, Total Time: 20 minutes.
Ingredients
5 large sweet potatoes
½ tsp. salt
2 tsp. dried thyme or 2 tbsps fresh thyme leaves
1 tsp. cinnamon
2 tbsp. ghee or coconut butter
1 cup water
Directions
Peel and chop sweet potatoes. Add to the pressure cooker.
Pour in water or vegetable broth. Cook sweet potatoes on high pressure for 8 minutes and quickly release the pressure.
Add ghee or coconut oil. Mix with spatula. Enjoy!
