An easy and delicious meal that is a hit for the whole family.
Serves: 4, Prep Time: 10 minutes, Total Time: 20 minutes.
Ingredients
1 pound shrimp
4 tbsp. olive oil
½ tsp. cumin powder
1 package bacon
¼ medium green cabbage (shredded)
2 cups cilantro leaves (not packed)
2 tbsps. lime juice
Salt and pepper to taste
Directions
Cut bacon into 1-inch pieces and cook on medium heat on the stovetop. Pat with a paper towel to drain and cool.
Thinly slice the cabbage and add to the mixing bowl. Roughly chop the cilantro leaves and add to the mixing bowl with the bacon, olive oil, lime juice, salt, and pepper.
In a separate bowl, mix shrimp, olive oil, and spices. Then toss.
Heat saute pan on medium heat and cook the shrimp for 1-2 minutes on each side or until cooked through.
Add shrimp, a few slices of avocado, and toppings of your choice.
Chef's Tip: Serve: As a salad (my favorite), with organic corn taco shells - soft or hard, or with organic flour tortillas.
