Spiced Chia Seed Muffins

Great for breakfast or a snack!










Serves: 12, Prep Time: 20 minutes, Total Time: 40 minutes.


Ingredients

  • 1 cup ground flax seed

  • ½ cup chia seeds

  • ½ cup granulated xylitol

  • 1 tsp. baking powder

  • ½ tsp. baking soda

  • 1 tsp. apple pie spice

  • ½ tsp. ground nutmeg

  • ½ tsp. ground ginger

  • ½ tsp. sea salt

  • 2 eggs

  • ⅔ cup plain greek yogurt

  • 1 tbsp. mct oil

  • 1 tsp. pure vanilla extract

  • Coconut oil cooking spray (optional)


Directions

  1. Preheat oven to 350°F.

  2. In a medium bowl, mix together dry ingredients.

  3. In a separate, larger bowl, mix together wet ingredients.

  4. Add dry ingredients to wet and stir to combine.

  5. Spoon batter into a greased muffin tin or cupcake liners.

  6. Bake for 20 minutes.
