Super Oatmeal Berry Bake

Delicious and stocked full of superfoods.










Serves: 4, Prep Time: 10 minutes, Total Time: 40 minutes.


Ingredients

  • 1 tbsp. coconut oil (you can use alternative)

  • 1 banana

  • 1-2 cups oats

  • 1-2 cups coconut milk (you can use alternative)

  • 2 tbsp. chia seeds

  • 2 tbsp. flax seeds

  • 1 tsp. cinnamon

  • 1 tsp. vanilla

  • 1 cup frozen mixed berries

  • 3 tbsp. crushed nuts (optional)

  • 1 ½ tsp. inulin (optional)

  • 1 tsp. honey (optional)

  • 1 tbsp. coconut flakes (optional)


Directions

  1. Preheat to 350°F. Coat bottom of pan with coconut oil. Smash banana in bottom of pan and cover as best possible.

  2. Add 1-2 cups of oats depending on how much you want to make. Add same quantity of milk alternative. Add 1-2 cups of coconut milk to pan. Add 1 tsp. of cinnamon. Add 1 tsp. of vanilla. Stir all ingredients.

  3. Add 1 ½ tsp. of inulin (powered chicory root and extra fiber). This is optional. Add 1 cup of frozen berries. Top with crushed nuts and coconut flakes (optional).

  4. Bake at 350°F for 20-30 minutes. After baking, add the yogurt and honey (optional).


Chef's Tip: Have fun with this dish. Mix it up.
